They are then pressed with minimal or no pressure to produce a higher quality juice. Our wines are aged for years to develop tannins, which give the wine its astringency. For post-fermentation maceration our Premium red wines are often left in contact with grape skins after fermentation to extract more tannins. We are not a mass-produced wine.
